Maggi's Mom's Cut and Come Again Cake
125 ml milk
1 large egg
100g caster sugar
100g soft margarine
2 tsps mixed spice
¼ tsp salt
200g self-raising flour
200g mixed sultanas, currants and raisins
12 glacé cherries halved
1. Heat oven to 180C, 160C(fan), Gas 4. Grease and line a160mm loose bottom lined cake tin.
2.Use a large bowl to beat together the margarine and the sugar.
Blend the spice, salt and flour separately then add to the bowl along with the egg beaten into the milk.
Blend to a smooth, creamy consistency. Stir in the fruit and cherries.
Transfer the mixture the cake tin and scatter some granulated sugar on top for a crunchy finish.
3. Bake for about 1 hour. Test for baked with a skewer which should come out clean.
Allow to cool COMPLETELY before cutting !
